2 cups of GF oat flour
1/4 cup of Coconut flour
3 tsp of baking powder
1/2 tsp salt
1/2 cup oil
1/4 cup coconut milk
3/4 cup water
2 tsp vanilla
2 large eggs
- mix wet ingredients in a separate bowl
-mix dry ingredients in a bowl
-When both fully mixed add together until fully incorporated, no need for mixing with a hand mixer or kitchenaid, a wisk is fine :)
Pour into cupcake wrappers. (makes about 12)
-Put a can of coconut in the refridgerator over night to separate.
-Open the can and scoop off the top layer of "fat", leave the liquid at the bottom. DO NOT USE THIS it will make it watery.
-Add 1/4 cup powdered sugar, more to taste if desired, 1 tsp of vanilla and beat until fluffy.
-Frost the cupcakes and sprinkle with a little natural sprinkles. And Voila!!!!
(Note: I haven't tried, but cocoa powder would probably be a great addition if you want chocolate frosting. I will play with it and let you know!)
